No contest, it's Mrs. Brisby from The Secret of NIMH.
Here is a mother, a simple field mouse, who is willing to go to great lengths to protect her family in the wake of her husband's death, even taking on the farmer's plow or going to visit her species' mortal enemy and asking for help. And in doing so she discovers that she is stronger than anyone gave her credit for, herself included.
